Bar: Caffarel, 72%.
Caffarel is an Italian company, and not one I would have expected to end up as my favorite. However, their chocolate is incredible, with a crisp snap and smooth mouthfeel.

Truffles: Wittamer Chocolates
I discovered Wittamer chocolates while living in Belgium in 2001-2002 and promptly delivered an addiction. They come in an amazing assortment, with perfectly tempered shells and rich, creamy centers. If you are ever in Bruxelles, I highly recommended checking out their Cafe and Shop in the Grand Sablon.
Hot Chocolate: Chocolat Moderne Midnight Oasis Dark Drinking Chocolate.
This is a recent discovery of mine, but a welcome one. Their chocolate is rich and just a tiny bit sweet; perfect for after a late night walk in brisk winter air. (However, my favorite morning pick-me-up is still my concoction of 3:1 Cocao (Dutch):Sugar Powder in Water with a sprinkle of Cayanne, a splash of vanilla, and a shot of espresso)
Baking: Ghirardelli’s Chocolate Morsels and Cocoa Powder
I’m not a fan of Ghirardelli chocolate as eating chocolate, but their baking morsels are a cut above the normal Nestle’s or ShurShine, and I find give my baked goods and confections that little extra boost of flavor without my having to break the bank on Valrhona or El Rey’s.
Nibs: Taza Chocolate Covered Nibs
Got these ones at a Boston farmers’ market. Local company, Colombian sourced. They are sitting on my desk, where they are quickly being eaten by a co-worker and me. It has a fairly sweet (probably 40-something%) coating, but it works well with the bitterness of the nibs, possibly even a bit too easy to eat.
